Born more than 2,000 years ago in Shandong province and popularised in Tianjin and Beijing, jianbing is eaten every morning by tens of millions of Chinese, standing on a street corner. It is the functional equivalent of the French croissant: fast, hot, comforting.
The recipe has not changed: a mixed-grain and mung-bean batter spread in a circle on a scorching griddle, an egg cracked and spread directly on the batter, a brush of lightly sweet-spicy fermented soybean sauce, fresh coriander, golden fried onions, and the centrepiece — a crispy cracker for the crunchy/soft contrast.
